Training Duration: Course is delivered over 20 hours. Eighteen hours tuition and one hour and a half hours for the examination.

Written Examination:
Mode: Centre based with external moderation by FETAC.
Weighting: 40%.
Duration of Exam: 60 minutes.
Format: Ten multiple choice questions, all questions to be attempted. Eight short answer questions, five questions to be attempted.

Mode: Centre based with external moderation by FETAC.
Weighting: 60%.
Components: Four assignments and their associated reports related to specific learning outcomes as indicated. Candidate must answer any three of the questions set. Where four questions are answered the best marks are the official marks for the purpose of the assessment.
Course Objective:
- Trainees will gain an understanding of process controls for food safety.
- Become familiar with supplier controls such as those based on the BRC (British Retail Consortium) and Bord Bia integrated Quality Assurance Schemes.
- Be familiar with procedures for food safety system management.
- Understand continuous improvement.
Candidate Requirement:
Anyone who wishes to learn how to work with food safely.

Course is delivered using tutor led discussion supported by multimedia projection. Summary course notes to each participant. Group discussion and workshops. Video clips on each of the areas outlined above are shown to reinforce important issues.
