Training Duration: Course is delivered over 8 hours. Seven hours tuition and one hour for the examination.

Assessment Summary:
- Written Examination 40%
- Portfolio Of Course Work 60%.
Written Examination:
Mode: Centre based with external moderation by FETAC.
Weighting: 40%.
Duration of Exam: 60 minutes.
Format: Ten multiple choice questions, all questions to be attempted. Eight short answer questions, five questions to be attempted.
Portfolio of course work:
Mode: Centre based with external moderation by FETAC.
Weighting: 60%.
Components: Candidate must answer any three of the four questions set. Where four questions are answered the best marks are the official marks for the purpose of the assessment.
Course Objective:
- That trainees will gain a clear understanding of legal and customer requirements for food safety standards as applies to products and processes within their workplace.
- Know the hazards that affect food safety in their business.
- Be familiar with the general rules of good hygiene.
- Understand the principles of HACCP and how they are applied to the control of food safety.
Candidate Requirement:
Anyone wishes to learn how to work with food safely.
Course Content:
Course is delivered using tutor led discussion supported by multimedia projection. Summary course notes to each participant. Group discussion and interaction. Video clips on each of the areas outlined above are shown to reinforce important issues.
